Haccho miso is Nagoya’s pride and joy. It’s found in so much of Nagoya’s distinctly flavourful cuisine, with a sour, slightly astringent, ultra-savoury flavour that makes it delicious when sweetened in savoury dishes, or used to balance sweet dishes. While you can likely find haccho miso sold in stores throughout Japan you’ll find it most easily in its place of origin, with all sorts of Haccho miso products in the factory stores of the only two places in the world that sell it: Kakukyu and Maruya.
