For a business trip in 2019, I stayed at Hotel Ryumeikan, near Tokyo station. It was very nice! It was stylish, and at that time the amenities included complimentary use of a travel smartphone. I'm not sure if they still do that, but it was a great way to reduce my own cell phone data usage when using Google Maps!

I think as long as you have access to the Yamanote line, you have many options for a pleasant stay.
Last July I stayed in a place in Kamata and it was nice to stay in a different part of Tokyo.
It was only 30 mins from Disneyland with one transfer.
